Travis
Oil based urethane will create that yellowing effect. You're best off using a polycrylic which is acrylic based. Its much more expensive, but it won't yellow your projects. I'm not sure how they stack up for outdoor use, though. But I do use it on some of my indoor projects and it works great. I hope this helps.
chkorte
I have made a few outdoor items that I sealed with a Min Wax product called PolyAcrylic. It is a water based sealer that goes on easy, drys quickly to a clear gloss. I have a few items that have been outside for over 2 years and are still in good shape. The finish is still shimy.
