I believe it will turn gray over time.  I'd talk to a boat person.  Lot's of teak is used on boats.  I think there is a Teak Oil for it, but like all outside stuff it has to be reapplied occasionally.

 

Never mind!  Early in the morning and only my first cup of coffee.  I read Cypress, when I pressed reply, by brain turned to Teak.....  forget what I said above.  I will now start on my second cup of coffee. :shock:

I have used a lot of cypress.  As Paul said it turns a nice silver gray color.  For my outdoor projects I like to use a transparent deck sealer/water proofer.  I seal my deck every few years and try to save a small quantity (pint) for my scroll saw projects.

I have cut out a marker to be used outside. I used 3/4" cypress. Should I leave it natural or put an exterior poly on it?  I am leaning towards leaving it natural but not sure what weathered cypress looks like.

I use a lot of cypress for outdoor signs, and tend to leave most of them natural, as cypress is naturally bug and rot resistant, and as stated above in time it will take on a nice grey color.

Yup, it will turn silver gray, in time, on it's own. The only finish that  I might apply would be to the lettering. Choose a color that will be easy to read on a silver gray background.
